Tomato Soup with Grilled Fresh Cheese Sandwich

I was feeling  a little under the weather, and was craving some comfort food today. This is week number twenty of Reddit’s 52 Weeks of Cooking challenge. This week’s theme is Diner’s/Drive-ins. I made a super simple, comforting tomato soup, and a grilled cheese sandwich. Instead of cheddar, I substituted my mild creamy fresh cheese I make using our delicious raw milk we get from Oakhill Organics.

I love parsley. This year it is growing like a weed in my garden beds. It is not only a delicious, fragrant, and versatile herb, but also makes a beautiful, simple arrangement anywhere in your house you could use a change, or freshener. Give it a try, and let me know what you think.

If you are gluten free, grab some gluten free bread. If you don’t care for bread, or just don’t have any bread in the house, no problemo. Just use a small ice cream scoop, and scoop some soft cheese, like  ricotta, cream cheese, or farmer’s cheese into your bowl. Add some parsley, your favorite beverage, and a spoon and you have a beautiful easy flavorful meal.  Don’t take my word for it. Tomato Soup

Ingredients
  • 1-2 Tbsp extra virgin olive oil
  • 1 large yellow onion, peeled and chopped
  • 5 cloves garlic
  • Jar tomato sauce (used one we canned from last year)
  • 2 cups water
  • 6 fresh, or frozen tomatoes
  • 1/2 tsp dried basil
  • 1 tbsp finely chopped fresh parsley + a few baby leaves for garnish
  • salt and pepper to taste
Instructions
  1. Saute onion until translucent
  2. Add a small pinch kosher salt
  3. Add garlic and stir until you can smell it (a minute or two)
  4. Add basil and stir
  5. Add tomatoes and cook for a few minutes, stirring
  6. Add tomato sauce
  7. Add 2 cups water
  8. Cook for 15 minutes
  9. Blend in pan using a hand or stick blender
  10. Stir in 1/2 the chopped parsley (add more if you like)
  11. Taste, and season with salt and pepper
  12. Taste again in 5 minutes and adjust seasoning to your liking
  13. Feel free to use a little siracha, or your favorite pepper sauce to spice things up a bit
  14. Garnish with parsley if you wish, or use fresh basil when in season
