- 1-2 Tbsp extra virgin olive oil
- 1 large yellow onion, peeled and chopped
- 5 cloves garlic
- Jar tomato sauce (used one we canned from last year)
- 2 cups water
- 6 fresh, or frozen tomatoes
- 1/2 tsp dried basil
- 1 tbsp finely chopped fresh parsley + a few baby leaves for garnish
- salt and pepper to taste
- Saute onion until translucent
- Add a small pinch kosher salt
- Add garlic and stir until you can smell it (a minute or two)
- Add basil and stir
- Add tomatoes and cook for a few minutes, stirring
- Add tomato sauce
- Add 2 cups water
- Cook for 15 minutes
- Blend in pan using a hand or stick blender
- Stir in 1/2 the chopped parsley (add more if you like)
- Taste, and season with salt and pepper
- Taste again in 5 minutes and adjust seasoning to your liking
- Feel free to use a little siracha, or your favorite pepper sauce to spice things up a bit
- Garnish with parsley if you wish, or use fresh basil when in season
