Cherry Crisp Parfait

This is week 25 of Reddit’s 52 Weeks of Cooking Challenge, and the theme this week is stone fruits. I started out making a cherry crisp this morning and needed breakfast for my girls, so I made the crisp into a parfait. The girls loved it so much we had it again for second breakfast and lunch.

These are cherries from trees in our yard. Dominic has an awesome system for picking them. He gets on a ladder, takes a garden rake and rakes them out of the high branches. Our girls scramble to gather the juicy cherries from the drop cloth and put them in a bowl, before our darling ever-hungry dog Butter eats them all. Fun times had by all.

Feel free to make this cherry crisp parfait with fresh cherries during cherry season or with frozen the rest of the year. Other stone fruits and berries will work beautifully as well. Be sure to share and enjoy this cherry crisp parfait with your family and friends.

Cherry Crisp Parfait

Ingredients
  • 1 Tbsp butter to grease a pan
  • Enough rinsed, stemmed and pitted cherries to fill your favorite ovenware
  • 2-3 cups oats (for topping)
  • 1-2 tsp cinnamon (for topping)
  • 2-3 Tbsp brown sugar (for topping)
  • 4-6 Tbsp butter (for topping)
Instructions
  1. Preheat oven to 350 degrees F.
  2. Butter your favorite ovenware pan
  3. Pile in the cherries up to the rim
  4. Make topping by mixing above ingredients with hands
  5. Sprinkle topping liberally over cherries
  6. Place pan on sheet tray in case it bubbles over
  7. Place sheet tray in hot oven for 40-50 minutes or until topping is lightly toasted and cherries are bubbling
  8. Allow crisp to cool a bit
  9. Layer in clear glass between yogurt, and berries
  10. Would make an awesome layer in a red, white and blue trifle for July 4th
  11. Enjoy!
