Salted Caramel Popcorn with Chocolate Drizzle

Happy Mother’s Day to everyone!!! This is the perfect Mother’s Day treat. Salty, sweet, crunchy, buttery goodness. This is week 19 of my New Year’s resolution to post at least once a week for 52 weeks. My personal goal just happens to coincide with Reddit’s 52 Weeks of Cooking Challenge. This week’s Reddit theme is caramelization. We had family movie night tonight, and I made salted caramel popcorn, with chocolate drizzle in honor of the occasion.

I used about a cup of popcorn, making sure I only included the popped corn. Turns out I missed a few kernels, and almost broke a tooth. Be very careful.

Here is the bowl of salted caramel popcorn without the chocolate drizzle. It was really delicious!

I added a drizzle of semi sweet chocolate, to the salted caramel popcorn, and it was stunning, and scrumptious. With or without the drizzle, I hope you give this recipe a try. It makes a full half sheet tray. If you are so inclined, share with family and friends.

Salted Caramel Popcorn with Chocolate Drizzle

Ingredients
  • 1 cup popcorn, popped (make sure no kernels get into the mix)
  • 1/2 cup butter
  • 1 cup light brown sugar, packed
  • 1/4 cup light corn syrup
  • 1/2 tsp kosher salt
  • 1/4 tsp baking soda
  • 1/2 tsp rum (you can also use vanilla extract or bourbon)
  • 1 cup semi sweet chocolate chips, melted (optional drizzling)
  • A pinch or 2 of kosher or sea salt for sprinkling at the end
Instructions
  1. Preheat oven to 250 degrees F.
  2. Place popped corn (no kernels) in a large bowl
  3. In a small saucepan over medium heat, melt butter
  4. Stir in brown sugar, corn syrup and salt
  5. Bring to a boil, stirring constantly
  6. Boil without stirring for 4 minutes
  7. Remove pan from heat, and stir in baking soda, and rum
  8. Pour over popcorn, stirring quickly to coat
  9. Pour caramel coated popcorn out on 1/2 sheet tray or large shallow baking dish
  10. Sprinkle salt (optional)
  11. Bake in preheated oven, stirring every 15 minutes, for 1/2 hour
  12. Remove from oven
  13. Drizzle chocolate over popcorn (optional)
  14. Let cool completely before breaking into pieces
  15. Enjoy!
