Salted Caramel Popcorn with Chocolate Drizzle | | |

- 1 cup popcorn, popped (make sure no kernels get into the mix)
- 1/2 cup butter
- 1 cup light brown sugar, packed
- 1/4 cup light corn syrup
- 1/2 tsp kosher salt
- 1/4 tsp baking soda
- 1/2 tsp rum (you can also use vanilla extract or bourbon)
- 1 cup semi sweet chocolate chips, melted (optional drizzling)
- A pinch or 2 of kosher or sea salt for sprinkling at the end
- Preheat oven to 250 degrees F.
- Place popped corn (no kernels) in a large bowl
- In a small saucepan over medium heat, melt butter
- Stir in brown sugar, corn syrup and salt
- Bring to a boil, stirring constantly
- Boil without stirring for 4 minutes
- Remove pan from heat, and stir in baking soda, and rum
- Pour over popcorn, stirring quickly to coat
- Pour caramel coated popcorn out on 1/2 sheet tray or large shallow baking dish
- Sprinkle salt (optional)
- Bake in preheated oven, stirring every 15 minutes, for 1/2 hour
- Remove from oven
- Drizzle chocolate over popcorn (optional)
- Let cool completely before breaking into pieces
- Enjoy!
