Cheese Crackers Sheet Tray

The other day, my girls and I were playing with friends. When we took a snack break, our friends shared their goldfish crackers with us. My girls love cheese crackers, so they were quite happy about it. I try really hard not to purchase crackers, because we end up consuming such large quantities, and then my girls don’t have room for fresh fruits and veggies. Also,  when I read the box, most often, some of the ingredients are foreign to me. By baking my own crackers, I can identify, pronounce and control the ingredients. I have been looking for a cheese cracker recipe that my girls would like as much as they like Annie’s, Goldfish and Cheese-its.

Cheese Cracker Dough

The beauty of these crackers, is they have a few simple ingredients, and when they are finished baking, and cooling, they are crispy and crunchy and delicious. This recipe comes together quickly and easily.

Heart Shaped Cheese Crackers Dough

As I said before, my girls can consume copious amounts of crackers. They are not the kids that have a cracker cut off switch, they have to be cut off. When I bake crackers, I can just bake a  third of the dough, on a sheet tray for a snack, and then when they are finished, the snack is over. The rest of the dough will last in the fridge, until you are in the mood for more cheese crackers. We baked our second batch within three days, and they were equally delicious as the first batch.

Heart Shaped Cheese Crackers

I collect cookie cutters. I chose the heart cutter and the mini animals, and I think they add a fun, extra special touch to these crackers. My girls really had fun helping choose the cookie cutters, and cut out their own animal cracker dough shapes.

Animal Cheese Crackers

Go wild and experiment with other cheeses, and or dried herbs, and spices. I think Asiago or Gryere would be delicious in these crackers. These crackers are not just for kids snacks, cut them with a pastry wheel and then bake them and bring them with a dip, to your next cocktail party or potluck to share with friends. Remember to adjust the salt if using a saltier cheese. This recipe is adapted from Savory Seasonings, Cheddar Goldfish Crackers, and before that, Country Living.

Ingredients
  • 1 cup white whole wheat flour
  • 3/4 tsp sea salt
  • 3 grinds black pepper
  • 1 tsp paprika
  • 4 Tbsp unsalted butter, room temperature
  • 1 packed cup of sharp cheddar cheese, shredded(feel free to use other varieties of cheese, asiago, gryere, peccorino…)
  • 3-4 Tbsp cold water
Instructions
  1. Place first 4 ingredients in bowl
  2. Stir ingredients to combine
  3. Place butter in bowl
  4. Use fork and mix and mash butter and flour mixture until little balls throughout(looks like coarse meal)
  5. Add cheddar cheese
  6. Mix with fork
  7. Add water and mix after each Tbsp(dough should come together nicely)
  8. Knead dough in bowl for 5 minutes with hand until dough is pliable and not sticky(should be similar to play dough consistency
  9. Wrap dough in plastic wrap and place in freezer for thirty minutes
  10. Cut dough in thirds and roll out each third as needed, to 1/8 inch thick on parchment paper, or Silpat(if you roll out thinner than 1/8 inch, crackers will be crunchier and will not puff up) you will get the hand of it after the first 1/3 of the crackers come out of the oven
  11. Use cookie cutters and cut out shapes, or cut into squares or other desired shapes with pastry wheel or sharp knife
  12. Preheat oven to 350 degrees F.
  13. Place parchment or Silpat on sheet tray and place in freezer for 10 minutes(enough time for the fat to solidify, making crispier crackers)
  14. Bake crackers for 10-16 minutes or until pumpkin colored flecks appear
  15. Let crackers cool completely before snacking(gives them time to crisp)

    I am trying to go off of dairy. Do you think you could substitute a non-dairy cheese like Daiya, or almond cheese? I am also wondering about subbing a gf flour blend?
