Cheese Crackers

Ingredients
  • 1 cup white whole wheat flour
  • 3/4 tsp sea salt
  • 3 grinds black pepper
  • 1 tsp paprika
  • 4 Tbsp unsalted butter, room temperature
  • 1 packed cup of sharp cheddar cheese, shredded(feel free to use other varieties of cheese, asiago, gryere, peccorino...)
  • 3-4 Tbsp cold water
Instructions
  1. Place first 4 ingredients in bowl
  2. Stir ingredients to combine
  3. Place butter in bowl
  4. Use fork and mix and mash butter and flour mixture until little balls throughout(looks like coarse meal)
  5. Add cheddar cheese
  6. Mix with fork
  7. Add water and mix after each Tbsp(dough should come together nicely)
  8. Knead dough in bowl for 5 minutes with hand until dough is pliable and not sticky(should be similar to play dough consistency
  9. Wrap dough in plastic wrap and place in freezer for thirty minutes
  10. Cut dough in thirds and roll out each third as needed, to 1/8 inch thick on parchment paper, or Silpat(if you roll out thinner than 1/8 inch, crackers will be crunchier and will not puff up) you will get the hand of it after the first 1/3 of the crackers come out of the oven
  11. Use cookie cutters and cut out shapes, or cut into squares or other desired shapes with pastry wheel or sharp knife
  12. Preheat oven to 350 degrees F.
  13. Place parchment or Silpat on sheet tray and place in freezer for 10 minutes(enough time for the fat to solidify, making crispier crackers)
  14. Bake crackers for 10-16 minutes or until pumpkin colored flecks appear
  15. Let crackers cool completely before snacking(gives them time to crisp)
