Cauliflower Pizza Slice on Plate

Cauliflower has been one of my favorite vegetables since I was pregnant with Marjie. I had Gestational Diabetes and was able to control my blood sugars with diet alone. I ate a lot of cauliflower, and grew to really love it.

It is wonderful raw, pickled, in a chopped salad, roasted, steamed, mashed with butter and onions, and marinated. I have never eaten it, however in a pizza crust.

A friend told me about it a couple years ago. Though I was really curious about it, I never tried to make it. I was pregnant, with a toddler in tow at the time, so I might not have understood just how easy it was to make.

I was re-introduced to this recipe about a month ago, when someone from a yahoo group I belong to, posted about it, and linked Eat.Drink.Smile blog. The recipe for cauliflower crust pizza is seriously all over the internet. It is an amazing grain free, gluten free phenomenon, that tastes delicious and pleases children and grownups alike.

Since I read about this recipe on my yahoo group, I have made it four times. My girls have devoured it each and every time. I change the recipe each time I make it, depending on what I have in my pantry and refrigerator.

Last time I made this, I formed two square pizzas, cut them in strips and had a separate homemade tomato sauce for dipping.

Even though this is not a crisp sturdy crust, my girls have no problem picking the slices up, and eating them like pizza.

Dominic can’t believe this crust is made with cauliflower, and whenever I make this for our girls, he snitches a bite or two when they are not looking.

Ingredients
  • FOR CRUST:
  • Either
  • 1 cup raw cauliflower, finely chopped, or grated OR
  • 1 cup roasted cauliflower, riced, or finely chopped
  • 1 large egg, beaten
  • 1 cup any kind of cheese that melts well(I use Mozzarella, and sometimes I add a little Provolone, Monterrey Jack or Swiss to the mix.
  • 2 grinds of black pepper
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • Toppings:
  • 1 cup of cheese that melts nicely
  • 3 Tbsp tomato sauce(from a jar or make your own)see easy recipe below.
  • TOMATO SAUCE
  • 2 tsp extra virgin olive oil
  • 1/2 medium onion,finely diced
  • 1/2 large carrot, finely diced
  • 2 cloves peeled garlic, minced or pressed
  • 1/2 zucchini, finely diced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • Small can of diced tomatoes with juice
Instructions
  1. Preheat oven to 450 degrees F.
  2. Cut head of cauliflower in 3rds
  3. Either
  4. Roast florets in 350 degree F. oven with a drizzle of extra virgin olive oil until it gets some color, then rice or finely chop it, OR
  5. Grate or finely chop 1 cup raw cauliflower florets
  6. Place raw cauliflower in microwave safe bowl and microwave for 5-7 minutes until cooked.
  7. Allow cauliflower to cool
  8. Shred Mozzarella or any cheese that melts nicely, and add to cooled cauliflower
  9. Lightly beat 1 large egg, and add to bowl of cauliflower and cheese
  10. Mix together and roll out on parchment or Silpat lined sheet tray
  11. Form an even circle or any other shape you like in a pizza
  12. Sprinkle herbs over cauliflower pizza
  13. Bake in oven for 13-16 minutes, until golden around edges
  14. Turn oven up to 500 degrees F.
  15. Spread 3 Tbsp of tomato sauce over crust
  16. Sprinkle any other cooked topping you enjoy
  17. Sprinkle 1 cup cheese over tomato sauce
  18. Place in oven for 5-7 minutes or until cheese is melted and crust looks crispy(it will not be crispy, it will just look crispy)
  19. Wait a few minutes and carefully remove pizza to a cutting board to slice
  20. See for yourself how yummy it is.
  21. TOMATO SAUCE
  22. Add olive oil to hot pan
  23. Add onions, carrots, zucchini, and cook for 7 minutes stirring frequently
  24. Add garlic, and cook until you can smell it
  25. Add herbs and stir for 2 minutes
  26. Add can of tomatoes and scrape bottom of pan with wooden spoon, to deglaze.
  27. cook for 10 minutes, stirring frequently, and then puree with hand blender

    this was so yummy…Tallulah had no idea she was eating a vegetable crust. NOTE TO ALL, don’t be tempted to add an extra egg b/c the crust seems too dry unless you want your crust to be more like an omelet!

      Hi Trente! I am so happy Tallulah liked the cauliflower crust pizza! I have made it many times since I posted about it and my girls just go crazy for it! You are so right about not adding an extra egg. Although it would be delicious, it would be more eggy and less like pizza crust and more like an omelet.
