- FOR CRUST:
- Either
- 1 cup raw cauliflower, finely chopped, or grated OR
- 1 cup roasted cauliflower, riced, or finely chopped
- 1 large egg, beaten
- 1 cup any kind of cheese that melts well(I use Mozzarella, and sometimes I add a little Provolone, Monterrey Jack or Swiss to the mix.
- 2 grinds of black pepper
- 1 tsp dried oregano
- 1 tsp dried parsley
- Toppings:
- 1 cup of cheese that melts nicely
- 3 Tbsp tomato sauce(from a jar or make your own)see easy recipe below.
- TOMATO SAUCE
- 2 tsp extra virgin olive oil
- 1/2 medium onion,finely diced
- 1/2 large carrot, finely diced
- 2 cloves peeled garlic, minced or pressed
- 1/2 zucchini, finely diced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp dried parsley
- Small can of diced tomatoes with juice
- Preheat oven to 450 degrees F.
- Cut head of cauliflower in 3rds
- Either
- Roast florets in 350 degree F. oven with a drizzle of extra virgin olive oil until it gets some color, then rice or finely chop it, OR
- Grate or finely chop 1 cup raw cauliflower florets
- Place raw cauliflower in microwave safe bowl and microwave for 5-7 minutes until cooked.
- Allow cauliflower to cool
- Shred Mozzarella or any cheese that melts nicely, and add to cooled cauliflower
- Lightly beat 1 large egg, and add to bowl of cauliflower and cheese
- Mix together and roll out on parchment or Silpat lined sheet tray
- Form an even circle or any other shape you like in a pizza
- Sprinkle herbs over cauliflower pizza
- Bake in oven for 13-16 minutes, until golden around edges
- Turn oven up to 500 degrees F.
- Spread 3 Tbsp of tomato sauce over crust
- Sprinkle any other cooked topping you enjoy
- Sprinkle 1 cup cheese over tomato sauce
- Place in oven for 5-7 minutes or until cheese is melted and crust looks crispy(it will not be crispy, it will just look crispy)
- Wait a few minutes and carefully remove pizza to a cutting board to slice

- TOMATO SAUCE
- Add olive oil to hot pan
- Add onions, carrots, zucchini, and cook for 7 minutes stirring frequently
- Add garlic, and cook until you can smell it
- Add herbs and stir for 2 minutes
- Add can of tomatoes and scrape bottom of pan with wooden spoon, to deglaze.
- cook for 10 minutes, stirring frequently, and then puree with hand blender
