- 2 ripe plantains
- 2-4 Tbsp raw organic coconut oil
- 2 medium ice cream scoops of coconut cream
- 1/2 tsp cinnamon
- Peel and diagonally slice ripe plantains
- Use non stick, or seasoned cast iron fry pan
- Add enough coconut oil to just cover bottom of pan
- When coconut oil is shimmering in hot pan carefully add slices of plantain
- Be careful not to overcrowd pan
- Wait 1-2 minutes or until plantain slices have some nice caramel color
- Jab edges of plantain slices with fork tines, and flip
- Wait 1-2 minutes longer or until 2nd side has color (watch carefully, there is a fine line between caramelized and burned)
- Enjoy as a side dish, or as a snack plain, or with spiced coconut cream
- Open unshaken can of full fat coconut milk
- Scoop some into a ramekin and sprinkle some cinnamon on top
