- 2 cups unbleached all purpose flour
- 2 tsp baking powder
- 2 tsp pumpkin pie spice
- 1 tsp cinnamon
- 1/2 tsp sea salt
- 2 cups dark brown sugar
- 2 eggs
- 1/2 cup(1 stick) unsalted butter
- 2 tsp vanilla extract
- 1 large crisp apple peeled, cored and chopped(I used a fuji)
- 1/8 cup orange juice(for soaking apples so they do not turn brown)
- 1 cup whole fresh cranberries
- Preheat oven to 350 degrees F.
- Butter 13 x 9 inch baking pan
- Add chopped apples to orange juice to soak(so apples do not get brown)
- Whisk together flour, baking powder, pumpkin pie spice, cinnamon, and sea salt in medium bowl
- in large bowl, mix together sugar, eggs, butter and vanilla until smooth(I used a hand mixer)
- Add dry ingredients to wet ingredients, and fold to combine
- Drain apples, and drink or toss OJ
- Add cranberries and chopped apples to batter
- Stir to combine
- Scoop out thick batter into prepared baking pan
- Push batter gently into corners of pans
- Bake for 30-35 minutes or until toothpick clean
- Cool completely
- Enjoy with or without a dollop of freshly whipped cream, or ice cream
