- 1 large egg white
- 1/4 cup brown sugar
- 1 tsp sea salt
- 1/2 tsp chili powder
- 1/4 tsp ground allspice
- 1/2 tsp ground cumin
- 1/4 tsp ground ginger
- 1/4 tsp ground cinnamon
- 1/2 tsp cayenne pepper
- 3 cups assorted nuts(I used cashews, walnuts, Brazil nuts, and almonds)
- Preheat oven to 300 degrees F.
- Beat egg white until soft and foamy
- Add sugar, salt, chili powder, allspice, cumin, ground ginger, ground cinnamon, and cayenne pepper
- Whisk until combined, and still frothy
- Add nuts
- Fold in nuts, making sure that all nuts are coated with frothy spice mixture
- Spread mixture in single layer onto an ungreased sheet pan
- Bake nuts for 15 minutes
- Remove sheet pan from oven
- Using a metal spatula, scrape, toss, stir, and separate nuts(it is a little work)
- Reduce oven to 250 degrees and return nuts to oven
- Bake for 10-15 minutes, or until medium brown
- Remove from oven for the second time
- Toss, and stir again
- Place baking pan on wire rack to cool (they will crisp as they cool)
- Break up any that stick together
