Spiced Mixed Nuts

Ingredients
  • 1 large egg white
  • 1/4 cup brown sugar
  • 1 tsp sea salt
  • 1/2 tsp chili powder
  • 1/4 tsp ground allspice
  • 1/2 tsp ground cumin
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cinnamon
  • 1/2 tsp cayenne pepper
  • 3 cups assorted nuts(I used cashews, walnuts, Brazil nuts, and almonds)
Instructions
  1. Preheat oven to 300 degrees F.
  2. Beat egg white until soft and foamy
  3. Add sugar, salt, chili powder, allspice, cumin, ground ginger, ground cinnamon, and cayenne pepper
  4. Whisk until combined, and still frothy
  5. Add nuts
  6. Fold in nuts, making sure that all nuts are coated with frothy spice mixture
  7. Spread mixture in single layer onto an ungreased sheet pan
  8. Bake nuts for 15 minutes
  9. Remove sheet pan from oven
  10. Using a metal spatula, scrape, toss, stir, and separate nuts(it is a little work)
  11. Reduce oven to 250 degrees and return nuts to oven
  12. Bake for 10-15 minutes, or until medium brown
  13. Remove from oven for the second time
  14. Toss, and stir again
  15. Place baking pan on wire rack to cool (they will crisp as they cool)
  16. Break up any that stick together
