Japanese Cucumber and Ginger Salad | | |

- 2 large english cucumbers, thinly sliced(peel cucumbers if you do not know the source, or the peel is bitter)
- 2 Tbsp sea salt(for letting the cucumbers sit for 10 min)
- 1 nob of fresh organic ginger, thinly sliced(peel ginger if you do not know the source)
- 4 Tbsp seasoned rice wine vinegar
- 2 tsp sugar
- 1/4 tsp sea salt
- Wash cucumbers and ginger
- Thinlly slice cucumbers and ginger(I use a mandoline)
- Sprinkle 2 Tbsp salt over cucumbers, toss to combine, and let sit for 10 minutes
- Heat vinegar for 30 seconds in microwave
- Add sugar
- Stir to dissolve sugar
- Add sliced ginger to vinegar sugar solution
- Rinse cucumbers well, and drain really well
- Add cooled vinegar,ginger,sugar solution to cucumbers
- Toss to combine
- Refrigerate for 1-2 hours
- Enjoy chilled or room temperature
