Japanese Cucumber and Ginger Salad

  • 2 large english cucumbers, thinly sliced(peel cucumbers if you do not know the source, or the peel is bitter)
  • 2 Tbsp sea salt(for letting the cucumbers sit for 10 min)
  • 1 nob of fresh organic ginger, thinly sliced(peel ginger if you do not know the source)
  • 4 Tbsp seasoned rice wine vinegar
  • 2 tsp sugar
  • 1/4 tsp sea salt
  1. Wash cucumbers and ginger
  2. Thinlly slice cucumbers and ginger(I use a mandoline)
  3. Sprinkle 2 Tbsp salt over cucumbers, toss to combine, and let sit for 10 minutes
  4. Heat vinegar for 30 seconds in microwave
  5. Add sugar
  6. Stir to dissolve sugar
  7. Add sliced ginger to vinegar sugar solution
  8. Rinse cucumbers well, and drain really well
  9. Add cooled vinegar,ginger,sugar solution to cucumbers
  10. Toss to combine
  11. Refrigerate for 1-2 hours
  12. Enjoy chilled or room temperature
