Nutty Slice and Bake Cookies | | |

Serves: 60 cookies
- 2 sticks unsalted butter
- 1 large egg
- 1 large egg yolk
- 1 cup sugar(I used beet sugar)
- 2 tsp vanilla extract
- 1/2 heaping cup nuts, finely chopped(I used walnuts)
- 1/4 tsp kosher salt
- 1 1/2 tsp cinnamon
- 2 3/4 cup white whole wheat flour
- 1/2 tsp baking soda
- Finely chop nuts, or pulse in a food processor
- Add first six ingredients to mixing bowl or food processor bowl
- Whisk to combine, or pulse a few times
- Add nuts to mixing bowl or food processor bowl
- In another bowl, whisk salt, cinnamon, flour and baking soda
- Add dry mixture to wet mixture and stir with wooden spoon, or spatula, or pulse to combine
- Dump dough out on parchment paper
- Roll into a log or whatever shape you desire
- Freeze for one hour
- Preheat oven to 350 degrees F.
- Remove the dough from freezer
- Thinly slice 1/4 inch rounds
- Place on parchment or Silpat lined sheet tray
- Bake for 12-14 minutes or until golden
- Let cool on sheet tray for 5 minutes
- Transfer cookies to cooling racks
- Enjoy cooled crispy crunchy cookies
