Nutty Slice and Bake Cookies

Serves: 60 cookies
Ingredients
  • 2 sticks unsalted butter
  • 1 large egg
  • 1 large egg yolk
  • 1 cup sugar(I used beet sugar)
  • 2 tsp vanilla extract
  • 1/2 heaping cup nuts, finely chopped(I used walnuts)
  • 1/4 tsp kosher salt
  • 1 1/2 tsp cinnamon
  • 2 3/4 cup white whole wheat flour
  • 1/2 tsp baking soda
Instructions
  1. Finely chop nuts, or pulse in a food processor
  2. Add first six ingredients to mixing bowl or food processor bowl
  3. Whisk to combine, or pulse a few times
  4. Add nuts to mixing bowl or food processor bowl
  5. In another bowl, whisk salt, cinnamon, flour and baking soda
  6. Add dry mixture to wet mixture and stir with wooden spoon, or spatula, or pulse to combine
  7. Dump dough out on parchment paper
  8. Roll into a log or whatever shape you desire
  9. Freeze for one hour
  10. Preheat oven to 350 degrees F.
  11. Remove the dough from freezer
  12. Thinly slice 1/4 inch rounds
  13. Place on parchment or Silpat lined sheet tray
  14. Bake for 12-14 minutes or until golden
  15. Let cool on sheet tray for 5 minutes
  16. Transfer cookies to cooling racks
  17. Enjoy cooled crispy crunchy cookies
