Golden Beet Root Salad with Avocado Dressing | | |

Serves: 4-8
- SALAD:
- 3 large handfuls of favorite salad greens
- 4-5 beet roots, roasted
- AVOCADO DRESSING:
- Flesh of one just ripe avocado(not over-ripe)
- 5 heaping Tbsp kefir(you can substitute plain yogurt or sour cream)
- Juice of 1 lemon
- pinch of sea salt
- 4 grinds of black pepper
- 3 cloves of fresh garlic, peeled and minced
- Large drizzle of extra virgin olive oil
- SALAD:
- Wash and spin lettuce dry
- Cut beet roots in half lengthwise, then cut again and again to get long wedges
- AVOCADO DRESSING:
- Add all ingredients to wide mouth mason jar
- Use hand blender to blend to desired consistency
- Taste and add more salt or lemon juice if desired
- Place in refrigerator for half hour, until ready to dress salad
- Dressing works better if you loosely dollop it over salad on plate
