Roasted Tomatillo Avocado Salsa

Ingredients
  • 8-10 tomatillos, paper husks taken off, halved
  • 1 jalapeno pepper, de-seeded, and spit in thirds
  • 3 cloves garlic, paper removed
  • flesh of 2 just ripe avocados( not over ripe), de-pitted
  • handful of cilantro leaves, finely chopped
  • 2 lime, juiced
  • drizzle of extra virgin olive oil
  • 1 tsp kosher salt
  • 3 grinds fresh black pepper
  • 2 more Tbsp extra virgin olive oil for dip
Instructions
  1. Preheat oven to 360 degrees F.
  2. Spread tomatillos, and jalapeno pepper out on pie plate
  3. Drizzle extra virgin olive oil
  4. Sprinkle kosher salt
  5. Grind black pepper
  6. Roast for 1 hour
  7. Add garlic to pan and roast for 15 more minutes
  8. Take out and pour/scrape into food processor
  9. Add flesh of 2 avocados, juice of 2 limes, cilantro, 2 Tbsp of extra virgin olive oil
  10. Turn on food processor for 30 seconds
  11. Turn off and scrape down bowl
  12. Turn on food processor for 1 minute
  13. Taste
  14. Add more salt, pepper and lime juice to taste
  15. Turn on food processor for 30 seconds
  16. Taste and make final adjustments/additions if needed
