Chocolate Snack Cake with Strawberry Jam

This recipe was supposed to be for brownies.  This was originally going to be the post for week 40 of Reddit’s 52 Weeks of Cooking Challenge. The theme for week 40 is Screw Ups Revisited. Friends, I am not exaggerating when I tell you I have so many screw-ups, I could not settle on anything to make.

Late this morning I was looking in my clean pantry (thank you Liz!), and my eyes settled on some cocoa powder. When I see cocoa powder, I think of brownies. I reminisced that I have never had a batch of brownies turn out the way they were supposed to or the way I wanted them to.  Why did I reminisce, and not lament you ask? Because when you screw up brownies, they are most often edible and sometimes delicious. I thought I would give it another try.

Even though this is not what it was supposed to be, I would hardly call it a screw up. This chocolate snack cake is moist, and chocolaty, with just enough sweetness. I made the pan of chocolate snack cake at 1:30 and by 3:30 the whole pan was polished off, by three of my family members and a kind neighbor, and friend who took some home for her kid’s snack.  Thank you Hanna! My six year old daughter told me that this cake is scrumptious and that she knows I will win an award for it. If you are dieting and have no will power, please do not, I repeat do not make this snack cake!

Chocolate Snack Cake with Strawberry Jam

Ingredients
  • 4 eggs, beaten
  • 1 cup butter
  • 5 squares bittersweet baking chocolate
  • 1 tsp baking powder
  • 2 cups dark brown sugar
  • 2 tsp vanilla extract
  • dash of sea salt
  • 1 cup AP flour
  • Strawberry jam heated and ready to drizzle (optional if you are crazy)
Instructions
  1. Preheat oven to 350 degrees F.
  2. Melt butter and chocolate on stove top
  3. Remove pan from heat
  4. Add all ingredients except for the eggs
  5. Stir until combined
  6. Add the eggs
  7. Stir until well blended
  8. Pour batter into 9″ x 13″ pan
  9. Bake for 20 minutes
  10. Take out and let cool completely
  11. Cut and enjoy!
  12. Bake for 20 minutes in
