Kazakh Rice with Ground Lamb and Dried Fruit

Welcome to week 38 of Reddit’s 52 Weeks of Cooking challenge. I was thinking of making this simple flatbread, but my girls had french toast for breakfast, and I was thinking more along the lines of a one pot meal. I will make this easy flatbread another day though, when stew is on the menu. I found a recipe for Kazakh Rice and decided to make it for dinner.

The rice gets a bit creamy, sort of risotto-like. This is a satisfying meal. Feel free to add more lamb if you like a little more meat. The original recipe called for sliced almonds, which would add some lovely texture, but I was fresh out of almonds, so I omitted them. I think cashews, and pistachios would add a wonderful flavor as well. Enjoy this comforting dish with your family and friends.

Kazakh Rice

Ingredients
  • 1 1/2 cups Jasmine or basmati rice, uncooked
  • 2 garlic cloves minced
  • 2 small onions chopped
  • Small handful dates pitted and chopped
  • Small handful prunes pitted and chopped
  • Small handful apricots chopped
  • 2 tsp sea salt
  • 1 1/2 cups ground cooked lamb
  • 1 teaspoon vegetable oil
Instructions
  1. Cook the lamb
  2. Drain and put aside into a bowl
  3. Rinse the rice
  4. Cook the rice with the onions, garlic, oil and 1 tsp salt
  5. Mix the lamb, and dried fruits a large bowl
  6. Cook the rice until almost done
  7. Do not drain the rice
  8. Add the lamb mixture to the rice
  9. Finish cooking the rice
  10. Season to taste(1 more tsp salt)
  11. Serve as a side dish or as main course(I served this as a main course)
