Cabbage Grilled Plate

This is our third week of being offered these lovely little cabbages in our Full Diet CSA. It is so interesting because about three weeks ago I received Cooks Country in the mail. I was paging through the issue, and to my surprise, ran across a recipe for grilled cabbage. My In-Laws get a subscription for me every year for the winter holidays, and I love flipping through the issues ogling the yummy sweet and savory recipes. I can recall having only made a handful of recipes out of the magazines over the years, however I love them and get tons of inspiration reading them cover to cover.

In fact, reading cooking magazines, and cookbooks is my guilty pleasure. I often have day dreams of my perfect vacation where someone else is taking care of my children, and I am sitting in a comfortable chair(outside or inside), with stacks of magazines and cookbooks. Of course nobody is invading my personal space, interrupting me or asking me questions, in these daydreams. Ahhhhh, one can dream, can’t one?

Cabbage Quartered

The first week our CSA offered these Spring cabbages, we only took one.  I remember quartering it, salting it, oiling it, and grilling it. My whole family absolutely went crazy over it. We ate it outside with some hamburgers made from fresh ground organic free range beef from happy Oregon Oakhill Organics Cows. When my family was done consuming this cabbage, everyone looked at the empty plate, and I am almost positive, they were secretly hoping that if they stared long and hard enough at the plate, some more would magically appear. It did not.

Cabbage Grilled

This recipe for grilled cabbage is inspired by the August 2013 issue of  Cooks Country Magazine. Feel free to add some thyme, parsley, or other fresh herbs to the cabbage after oiling it. You can absolutely use it in the place of lettuce on your hamburgers, veggie burgers, or turkey burgers. Slice it and put it on top of hot dogs or sausages. By all means, slice it after grilling, and add it to a scrumptious stir-fry. Experiment away, and let me know how much you, your family and friends love grilled cabbage.

Grilled Cabbage

Ingredients
  • Cabbages
  • Kosher Salt
  • Extra virgin olive oil
Instructions
  1. Peel off dirty, or wilted outer layers of cabbage
  2. Quarter each cabbage lengthwise, keeping the core intact
  3. Liberally sprinkle quarters with kosher salt
  4. Rub kosher salt into each quarter
  5. Wait 5 minutes
  6. Drizzle extra virgin olive oil over quarters
  7. Toss with spoon or hand and thoroughly coat quarters
  8. Place on grill over low to medium heat
  9. Turn with tongs after 5 minutes or upon seeing grill marks
  10. When all sides have grill marks, and cabbage quarters are soft and juicy, they are ready
  11. Transfer to plates and enjoy
