Roasted Honey Glazed Carrots

In the last couple months we discovered Heavenly Honey Farm’s honey, thanks to a good friend.  We have their local raw blackberry honey in our pantry right now.  It tastes so wonderful, we use it every chance we get. I put it in my tea, and bake with it. I love to blend it into plain organic yogurt, and drizzle it over fresh berries and cream. I also love to eat it with my homemade swiss muesli, and make these, delicious, roasted, honey glazed carrots.

Carrots Seasoned Uncooked

I served these carrots with some delicious roasted squash and zucchini from our garden, and asian inspired marinated chicken thighs. The whole meal was a huge hit. Both my girls, and Dominic love these lightly glazed, sweet treats. My 2 1/2 year old’s  favorite way of eating these carrots, is to lick the honey off of them first, and then she eats the rest of the carrot. However you choose to eat these, I hope you and your family enjoy these carrots as much as we do.

Roasted Honey Glazed Carrots

Ingredients
  • 4 large carrots, cut into diagonal ovals or coins
  • 1 Tbsp grapeseed oil
  • 1 tsp kosher salt
  • 2 grinds of fresh black pepper
  • 2 Tbsp local honey
Instructions
  1. Preheat oven to 475 degrees F.
  2. Wash and dry carrots(leave skin on for more nutrients)
  3. Cut carrots on a slight diagonal into 2″ ovals, or coins
  4. Place carrots in bowl
  5. Add oil, kosher salt, and black pepper to bowl
  6. Toss with hands to combine
  7. Place on parchment covered sheet tray
  8. Roast for 15 minutes, then flip carrots over
  9. Roast carrots for 10-15 more minutes, or until carrots start getting some color
  10. Add honey to medium bowl
  11. Take carrots out of oven
  12. Place carrots in bowl
  13. Carefully mix carrots with spoon to coat with honey
  14. Serve and enjoy
