Choctaw Corn Chowder

Ingredients
  • 3-4 bacon strips, diced
  • 2 medium onions, diced
  • 5 cloves of garlic, minced (I use a garlic press)
  • 5 red sweet peppers, de-seeded and diced
  • 3 small semi hot red peppers, semi de-seeded and diced
  • 5-6 cups of sweet corn from the cob(5 ears)
  • 2 potatoes, diced
  • 5 cups vegetable broth, or chicken broth
  • Bunch of fresh parsley, chopped(reserve some for garnish)
  • 7 stems full of fresh thyme leaves, leaves stripped
  • 2 whole bay leaves
Instructions
  1. In large pot, sauté bacon for a few minutes
  2. Add onion, garlic and peppers and sauté for a few more minutes, stirring often
  3. Add corn and sauté for a few minutes, stirring often
  4. Add potatoes, parsley and thyme and stir
  5. Add vegetable broth, and bay leaves
  6. Stir scraping the bottom of the pan
  7. Bring to boil
  8. Reduce heat and simmer 30-40 minutes, scraping bottom every ten minutes
  9. Ladle into soup bowls
  10. Fresh parsley to garnish
  11. Enjoy
