Moist and Chewy Brownies

Ingredients
  • 1/3 cup Dutch-processed cocoa
  • 1 1/2 tsp instant coffee
  • 1/2 cup plus 2 Tbsp boiling water
  • 2 ounces semi-sweet chocolate, rough chopped
  • 1/2 cup plus 2 Tbsp vegetable oil
  • 4 Tbsp unsalted butter, melted
  • 2 large eggs plus 2 large yolks
  • 2 tsp vanilla extract
  • 2 cups sugar
  • 1/2 cup brown sugar
  • 3/4 teaspoon sea salt
  • 1 3/4 cups all-purpose flour
  • 6 ounces dark chocolate cut into chunks, or chips
Instructions
  1. Preheat oven to 350 degrees F.
  2. Line 9x13 pan with tinfoil leaving handles on the ends
  3. Paint melted butter on the tinfoil making sure you get into the corners
  4. Put pan aside
  5. With whisk, and large bowl, mix together all ingredients in order one after the other fully combining after each one until you get to the flour
  6. Fold flour in gently with a rubber spatula until almost combined
  7. Fold chips in gently until combined
  8. Pour brownie batter in prepared pan (scrape every last drop)
  9. Bake at 350 for 30 min
  10. Let cool for 3 minutes
  11. Remove brownies from pan using tinfoil handles
  12. Place tinfoil on cooling rack
  13. Cut brownies into squares
  14. Let cool
