Oatmeal Chocolate Chip Cookies | | |

Serves: 18 cookies
- 1/2 cup(1 stick) unsalted butter, room temp
- 1/2 cup packed dark brown sugar
- 1/2 cup granulated cane sugar
- Light drizzle of molasses
- 1 large egg, room temperature
- 1 large yolk
- 1 Tbsp vanilla extract
- 3/4 cup all purpose flour
- 1/2 tsp baking soda
- 1/2 tsp kosher salt
- 2 1/4 cups rolled oats
- 1 heaping cup dark or semi dark chocolate chips
- Heat oven to 350 degrees F.
- Line 2 half sheet trays with parchment paper or Silpat
- Whisk flour, baking soda and salt in a medium bowl until combined
- Beat butter and sugars in a large bowl until combined (2 minutes)
- Add egg, egg yolk, molasses and vanilla to butter sugar, and beat in until creamy
- Add flour mixture and mix until combined
- Add oats and chocolate chips, and mix well
- Scoop out heaping tablespoons
- Loosely roll them into balls
- Place balls 2 inches apart on half sheet trays
- Bake for 10-12 minutes, or until golden
- Recipe doubles easily
