Oatmeal Chocolate Chip Cookies

Oatmeal chocolate chip cookies are my ultimate favorite comfort food. They are chewy and crisp, and hold lusciously together when dunked in creamed coffee, hot cocoa, or milk. Welcome to week 32 or Reddit’s 52 Weeks of Cooking challenge. This week’s theme is “your favorites”. I am happy to share my delicious favorite cookie with you.

This oatmeal chocolate chip cookie is adapted from the back of a package of old fashioned oats. This cookie recipe can be altered if you wish. Go crazy and use half a cup of dark chocolate chips and half a cup of white chocolate chips, add nuts or seeds, or omit the chocolate chips and add dried fruit in its place. Whatever you put into this cookie recipe, I hope you make and enjoy it with your family and friends.

Oatmeal Chocolate Chip Cookies

Serves: 18 cookies
Ingredients
  • 1/2 cup(1 stick) unsalted butter, room temp
  • 1/2 cup packed dark brown sugar
  • 1/2 cup granulated cane sugar
  • Light drizzle of molasses
  • 1 large egg, room temperature
  • 1 large yolk
  • 1 Tbsp vanilla extract
  • 3/4 cup all purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 2 1/4 cups rolled oats
  • 1 heaping cup dark or semi dark chocolate chips
Instructions
  1. Heat oven to 350 degrees F.
  2. Line 2 half sheet trays with parchment paper or Silpat
  3. Whisk flour, baking soda and salt in a medium bowl until combined
  4. Beat butter and sugars in a large bowl until combined (2 minutes)
  5. Add egg, egg yolk, molasses and vanilla to butter sugar, and beat in until creamy
  6. Add flour mixture and mix until combined
  7. Add oats and chocolate chips, and mix well
  8. Scoop out heaping tablespoons
  9. Loosely roll them into balls
  10. Place balls 2 inches apart on half sheet trays
  11. Bake for 10-12 minutes, or until golden
  12. Recipe doubles easily
  13. Enjoy!
