- 1-2 Tbsp olive oil
- 1 Tbsp coconut oil or butter
- 1/2 yellow onion, diced
- 1/2 bell pepper, diced
- 2-4 button mushrooms, sliced
- 1/2 block of tofu, pressed, drained and cubed or diced
- 1/4 tsp curry powder
- 1/2 tsp garlic powder
- Kosher salt to taste(pinch or 2)
- Black pepper to taste(couple grinds)
- 5 chives, snipped and sprinkled over plated dish
- Saute onions, bell peppers, and mushrooms with a good pinch of salt in olive oil until browned
- Transfer cooked vegetables onto a plate
- Add coconut oil to same pan
- Add tofu to pan
- Saute for a few minutes
- Add seasonings (salt, pepper, garlic and curry powder)
- Saute for a few minutes
- Add cooked vegetables back in to the hot pan
- Stir everything until incorporated for 1-2 minutes
- Check for seasoning
- Add more salt or pepper if needed
- Plate up
- Snip chives all over scramble
- Enjoy
