Baked Salt and Pepper Potato Chips

  • yellow waxy potatoes
  • olive oil
  • salt
  • pepper (optional)
  1. Preheat oven to 215 degrees
  2. Wash potatoes
  3. Slice potatoes paper thin using a mandolin
  4. Line a sheet tray with parchment or Silpat
  5. Place potato slices in a single layer on sheet tray
  6. Brush one side of potatoes with olive oil
  7. Grind some black pepper over potato slices
  8. Bake for 50-60 minutes, or until golden brown and slightly curled
  9. Sprinkle salt over chips
  10. Let sit for 2-5 minutes to finish crisping
  11. Enjoy!
