Baked Salt and Pepper Potato Chips | | |

- yellow waxy potatoes
- olive oil
- salt
- pepper (optional)
- Preheat oven to 215 degrees
- Wash potatoes
- Slice potatoes paper thin using a mandolin
- Line a sheet tray with parchment or Silpat
- Place potato slices in a single layer on sheet tray
- Brush one side of potatoes with olive oil
- Grind some black pepper over potato slices
- Bake for 50-60 minutes, or until golden brown and slightly curled
- Sprinkle salt over chips
- Let sit for 2-5 minutes to finish crisping
- Enjoy!
