Poached Eggs With Caramelized Cabbage and Roasted Beets | | |
- 2 eggs(as fresh as you can get them)
- 2 Tbsp white vinegar
- salt and pepper to taste
- Bring water in shallow saucepan to almost boiling
- Add two teaspoons of vinegar to the water
- Crack egg in small cup (I used metal measuring cup)
- Lower slotted spoon into water
- Gently pour egg into the bowl of slotted spoon
- Gently lift spoon out from under egg, of pan trying not to disturb egg too much
- Turn off heat
- Cover pan
- Set timer for 3 1/2 minutes
- When timer goes off, use slotted spoon to lift egg out of pan
- Rest spoon on towel for a few seconds to drain water
- Place egg on toast, or cabbage, or whatever you choose
- Add salt and pepper if you choose
- Break yolks and enjoy.
