Caramelized Onion Pizza

Ingredients
  • Pizza Dough
  • --------------
  • 3 Cups Flour
  • 1 scant (a little less than) Tbsp yeast
  • 1 1/3 cup warm water
  • Pinch of kosher salt
  • Drizzle of extra virgin olive oil
  • --------------------
  • Caramelized Onions
  • --------------------
  • 4-6 medium onions, sliced
  • 1/2 stick butter
  • 1 pinch of garlic powder
  • 1 pinch kosher salt
  • ------------------
  • Pizza Sauce
  • ------------------
  • 1 jar of homemade tomato sauce
  • 2 Tbsp raw coconut oil
  • 1 small roasted beet peeled and chopped
  • 2 whole cloves garlic peeled
  • 1 carrot peeled and chopped
  • 1 parsnip peeled and chopped
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano

  • Toppings
  • -----------------
  • 1 1/2 cups fresh soft cheese, or cream cheese
  • 2-4 cups shredded mozzarella
  • extra virgin olive oil
Instructions
  1. Place all dough ingredients into stand mixer with dough hook
  2. Mix on low until all ingredients are combined
  3. Add more flour by the Tbsp and continue mixing (kneading) until ball forms and dough is not tacky
  4. Lightly grease bowl with EVOO
  5. Take dough out of stand mixer bowl and form a ball
  6. Place in large greased bowl, then flip over so dough ball is completely greased
  7. Cover bowl with plastic wrap
  8. Place bowl in warm spot til dough ball is doubled or tripled in size
  9. Use your hands to lightly oil two half sheet pans with EVOO
  10. Use your oiled hands to reach into bowl and take half the pizza dough
  11. Press it into prepared pan
  12. Poke holes with fork tines
  13. Place in 450 degree oven for 5-7 minutes to par bake crust
  14. Take crust out top with whatever floats your boat
  15. Place back in the oven for 10+ minutes, or until crust has a little color, and cheese is melted and bubbly
  16. Take out, transfer to cutting board, slice, and enjoy!
