Serves: 2 large sheet trays
- Pizza Dough

- 3 Cups Flour
- 1 scant (a little less than) Tbsp yeast
- 1 1/3 cup warm water
- Pinch of kosher salt
- Drizzle of extra virgin olive oil

- Caramelized Onions
- --------------------
- 4-6 medium onions, sliced
- 1/2 stick butter
- 1 pinch of garlic powder
- 1 pinch kosher salt
- ------------------
- Pizza Sauce
- ------------------
- 1 jar of homemade tomato sauce
- 2 Tbsp raw coconut oil
- 1 small roasted beet peeled and chopped
- 2 whole cloves garlic peeled
- 1 carrot peeled and chopped
- 1 parsnip peeled and chopped
- 1/2 tsp dried basil
- 1/2 tsp dried oregano

- Toppings
- -----------------
- 1 1/2 cups fresh soft cheese, or cream cheese
- 2-4 cups shredded mozzarella
- extra virgin olive oil
- Place all dough ingredients into stand mixer with dough hook
- Mix on low until all ingredients are combined
- Add more flour by the Tbsp and continue mixing (kneading) until ball forms and dough is not tacky
- Lightly grease bowl with EVOO
- Take dough out of stand mixer bowl and form a ball
- Place in large greased bowl, then flip over so dough ball is completely greased
- Cover bowl with plastic wrap
- Place bowl in warm spot til dough ball is doubled or tripled in size
- Use your hands to lightly oil two half sheet pans with EVOO
- Use your oiled hands to reach into bowl and take half the pizza dough
- Press it into prepared pan
- Poke holes with fork tines
- Place in 450 degree oven for 5-7 minutes to par bake crust
- Take crust out top with whatever floats your boat
- Place back in the oven for 10+ minutes, or until crust has a little color, and cheese is melted and bubbly
- Take out, transfer to cutting board, slice, and enjoy!
