Carrot Ginger Apple Soup

  • 1 1/2 Tbsp coconut oil
  • 8 medium carrots, peeled and diced
  • 1 thumb sized nob of ginger peeled and grated
  • 2 medium celery root, peeled and diced
  • 1 small apple peeled and chopped
  • 1 tsp kosher salt, plus more to taste later if needed
  • Finishing in bowl
  • Drizzle of Siracha
  • Chopped apple
  • drizzle of apple cider vinegar(with the Mother)
  1. Add all ingredients to heavy bottomed pot
  2. Stir everything well for 3 minutes to coat everything with melted coconut oil
  3. Add enough water to just cover the ingredients
  4. Bring to boil
  5. Turn down heat to simmer
  6. Simmer for 20-30 minutes, or until carrots and celery root are fork tender
  7. Puree with hand blender in pot, until desired consistency is achieved
  8. Place soup in bowls and garnish with chopped apple and apple cider vinegar or a drizzle of Siracha
  9. Enjoy!
