- 1 1/2 Tbsp coconut oil
- 8 medium carrots, peeled and diced
- 1 thumb sized nob of ginger peeled and grated
- 2 medium celery root, peeled and diced
- 1 small apple peeled and chopped
- 1 tsp kosher salt, plus more to taste later if needed
- Finishing in bowl
- Drizzle of Siracha
- Chopped apple
- drizzle of apple cider vinegar(with the Mother)
- Add all ingredients to heavy bottomed pot
- Stir everything well for 3 minutes to coat everything with melted coconut oil
- Add enough water to just cover the ingredients
- Bring to boil
- Turn down heat to simmer
- Simmer for 20-30 minutes, or until carrots and celery root are fork tender
- Puree with hand blender in pot, until desired consistency is achieved
- Place soup in bowls and garnish with chopped apple and apple cider vinegar or a drizzle of Siracha
- Enjoy!
