Quinoa Stuffed Butternut Squash | | |

- butternut squash
- zest of 1/2 a lemon
- fresh parsley
- cooked quinoa
- salt
- pepper
- balsamic vinegar
- extra virgin olive oil(evoo)
- Preheat oven to 400 degrees F.
- Cut Butternut squash in half, widthwise, exposing full cavity full of seeds
- Scoop out seeds, and reserve for roasting at a later date
- Drizzle evoo into cavity
- Sprinkle salt into cavity
- Grind Pepper into cavity
- Mix zest of 1/2 small lemon, 2 Tbsp chopped parsley, salt and pepper with 2 cups cooked quinoa
- Fill squash cavity to overflowing with herbed quinoa
- Drizzle more evoo, and place on parchment covered baking sheet
- Place in hot oven
- Bake for 30-45 minutes or until squash is cooked through and quinoa is lightly browned and crispy on top
- Take out of oven and let cool a bit
- Enjoy beside a lovely salad for lunch or dinner
