Potato Onion Cheese Frittata

  • 3-4 Tbsp extra virgin olive oil
  • 5 large eggs
  • 1/8 cup whole milk or cream
  • some sprinkles of kosher salt
  • 3 grinds black pepper
  • fresh grating of nutmeg
  • 1/2 cup freshly grated cheddar cheese(1/4 cup inside, 1/4 cup on top)
  • 6 medium potatoes, scrubbed, peeled and roughly cut in chunks
  • 5 small onions, peeled and sliced
  1. Microwave potato chunks for 5 minutes
  2. Place oil, and potatoes in well seasoned cast iron, or fry pan
  3. Saute potatoes stirring frequently until they get a little color
  4. Add onions, and a sprinkle of salt, stirring until onions get a little color
  5. Whisk 5 eggs with milk or cream
  6. Add a sprinkle of kosher salt, a fresh grating of nutmeg, and some fresh ground black pepper, and whisk together
  7. Add 1/4 cup grated cheese, and fold into egg mixture
  8. Preheat oven to 350 degrees F.
  9. Pour egg, cheese mixture gently into cast iron or fry pan
  10. Cook for 1 minute undisturbed on stove top
  11. Sprinkle 1/4 cup grated cheese over top
  12. grinds of black pepper over top
  13. Grate some nutmeg over top
  14. Place in oven and bake for 10 minutes
