Potato Onion Cheese Frittata | | |

- 3-4 Tbsp extra virgin olive oil
- 5 large eggs
- 1/8 cup whole milk or cream
- some sprinkles of kosher salt
- 3 grinds black pepper
- fresh grating of nutmeg
- 1/2 cup freshly grated cheddar cheese(1/4 cup inside, 1/4 cup on top)
- 6 medium potatoes, scrubbed, peeled and roughly cut in chunks
- 5 small onions, peeled and sliced
- Microwave potato chunks for 5 minutes
- Place oil, and potatoes in well seasoned cast iron, or fry pan
- Saute potatoes stirring frequently until they get a little color
- Add onions, and a sprinkle of salt, stirring until onions get a little color
- Whisk 5 eggs with milk or cream
- Add a sprinkle of kosher salt, a fresh grating of nutmeg, and some fresh ground black pepper, and whisk together
- Add 1/4 cup grated cheese, and fold into egg mixture
- Preheat oven to 350 degrees F.
- Pour egg, cheese mixture gently into cast iron or fry pan
- Cook for 1 minute undisturbed on stove top
- Sprinkle 1/4 cup grated cheese over top
- grinds of black pepper over top
- Grate some nutmeg over top
- Place in oven and bake for 10 minutes
