Cranberry Orange Thyme Scones | | |

- 1 3/4 cups fresh cranberries
- 1/2 cup dark brown sugar
- zest of 1 medium orange
- 2 Tbsp fresh thyme leaves
- 2 1/4 cups unbleached all purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon sea salt
- 12 tablespoons cold unsalted butter, cut in cubes
- 1 egg, beaten
- 1/2 cup organic 2% milk
- 1 tsp vanilla extract
- cane sugar, for topping
- Preheat the oven to 350 degrees F.
- Line 2 sheet trays with parchment or a Silpat
- In the bowl of a food processor
- Process the cranberries until lightly chopped
- Dump out into a bowl toss with the brown sugar and orange zest, vanilla extract, and fresh thyme leaves
- Mix until combined
- In the cleaned and dried food processor bowl, pulse the flour, baking powder, and salt
- Cut the chilled butter into small pieces
- Add butter to food processor bowl
- Pulse butter with the flour in the processor until fine and coarse meal
- Dump coarse meal into large mixing bowl
- Add the cranberry mixture, and mix to combine
- In medium bowl beat together egg, vanilla extract, and milk
- Add the beaten egg, vanilla extract, and milk to flour/cranberry mixture Stir until just combined(do not over mix)
- Scoop spoonfuls of dough onto lined sheet trays
- Sprinkle the tops with cane sugar
- Bake for about 20-25 minutes, or until golden
- Serve warm with plenty of butter, homemade jam, or spiced cranberry sauce
