Cranberry Orange Thyme Scones

Ingredients
  • 1 3/4 cups fresh cranberries
  • 1/2 cup dark brown sugar
  • zest of 1 medium orange
  • 2 Tbsp fresh thyme leaves
  • 2 1/4 cups unbleached all purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon sea salt
  • 12 tablespoons cold unsalted butter, cut in cubes
  • 1 egg, beaten
  • 1/2 cup organic 2% milk
  • 1 tsp vanilla extract
  • cane sugar, for topping
Instructions
  1. Preheat the oven to 350 degrees F.
  2. Line 2 sheet trays with parchment or a Silpat
  3. In the bowl of a food processor
  4. Process the cranberries until lightly chopped
  5. Dump out into a bowl toss with the brown sugar and orange zest, vanilla extract, and fresh thyme leaves
  6. Mix until combined
  7. In the cleaned and dried food processor bowl, pulse the flour, baking powder, and salt
  8. Cut the chilled butter into small pieces
  9. Add butter to food processor bowl
  10. Pulse butter with the flour in the processor until fine and coarse meal
  11. Dump coarse meal into large mixing bowl
  12. Add the cranberry mixture, and mix to combine
  13. In medium bowl beat together egg, vanilla extract, and milk
  14. Add the beaten egg, vanilla extract, and milk to flour/cranberry mixture Stir until just combined(do not over mix)
  15. Scoop spoonfuls of dough onto lined sheet trays
  16. Sprinkle the tops with cane sugar
  17. Bake for about 20-25 minutes, or until golden
  18. Serve warm with plenty of butter, homemade jam, or spiced cranberry sauce
