Serves: 2 half sheet trays
- 7 cups rolled oats
- 2 1/2 cups apple cider, or apple juice
- 2 Tbsp honey
- 2 Tbsp ground cinnamon
- 2/3 cup raw hulled pumpkin seeds
- 2/3 cup raw sunflower seeds
- 2 cups dried cranberries
- Preheat oven to 325 degrees F.
- Mix together oats, cider,cinnamon, pumpkin seeds, and sunflower seeds
- Stir honey into apple cider until dissolved
- Pour apple cider honey mixture over oats mixture
- Stir until thoroughly combined
- Spread over 2 half sheet trays
- Place both trays in the oven
- Bake for 65-70 minutes, or until the granola is golden
- Be sure to stir every 15 minutes
- Rotate trays 2 times through baking
- Add fruit last 10 minutes
- Let cool completely and store in sealed containers
- Enjoy with milk, or topped with yogurt, chopped apple, and a drizzle of honey or jam
