Apple Cinnamon Granola

Serves: 2 half sheet trays
Ingredients
  • 7 cups rolled oats
  • 2 1/2 cups apple cider, or apple juice
  • 2 Tbsp honey
  • 2 Tbsp ground cinnamon
  • 2/3 cup raw hulled pumpkin seeds
  • 2/3 cup raw sunflower seeds
  • 2 cups dried cranberries
Instructions
  1. Preheat oven to 325 degrees F.
  2. Mix together oats, cider,cinnamon, pumpkin seeds, and sunflower seeds
  3. Stir honey into apple cider until dissolved
  4. Pour apple cider honey mixture over oats mixture
  5. Stir until thoroughly combined
  6. Spread over 2 half sheet trays
  7. Place both trays in the oven
  8. Bake for 65-70 minutes, or until the granola is golden
  9. Be sure to stir every 15 minutes
  10. Rotate trays 2 times through baking
  11. Add fruit last 10 minutes
  12. Let cool completely and store in sealed containers
  13. Enjoy with milk, or topped with yogurt, chopped apple, and a drizzle of honey or jam
