I have started making my own almond milk, in the last month. I drink an almond milk smoothie on weekday mornings with ground flax, ground almonds, vanilla extract, and frozen berries. It is so quick and easy to make, and since I cut out caffeine, it makes me feel great. It gives me the energy to start my day, besides the fact, it is delicious. Angela from Cottage Magpie‘s husband, Mr. Magpie shared his delicious recipe for almond milk with me about a month ago, and I have been making it ever since. I have four weeks of ground almonds in my freezer, and most days, I can hear them calling out to me, “bake with me, cook with me, put me in a smoothie”, so I happily oblige.
These cookies are made with ground almonds, instead of traditional wheat flour.
When I was younger, I used to love eating the occasional Chipwich. I have not had them in years, but still remember the best part of eating this treat, was when the cookie thawed a bit and became soft. As you took a bite, the cookie and ice cream melted together in your mouth. This cookie is like that. It is not a traditional chocolate chip cookie in the sense that there are no eggs and no wheat flour, but it is every bit as delicious. It tastes yummy without ice cream, but when you pair this cookie with ice cream, it is scrumptious.
If you are going to make ice cream sandwiches with them, pop them in the freezer for about a half an hour so they are not as soft. Then place a generous scoop of your favorite flavor ice cream, in the middle of a turned over cookie, place another turned over cookie on top of the ice cream. Then press the cookies together gently, snugly sandwiching the ice cream. Enjoy them right away, or wrap your ice cream sandwiches tightly in plastic wrap and place in the freezer.
