Ground Almond Chocolate Chip Cookies

  • 1 cup ground almonds
  • 3 Tbsp water
  • 1 1/2 Tbsp ground flax seed
  • 1/3 cup coconut oil, melted
  • 1/3 cup mini semisweet chocolate chips
  • 2 tsp vanilla extract
  • 1 cup organic cane sugar
  • 1/4 tsp sea salt
  1. Preheat oven to 350 degrees F.
  2. Mix flax seed and water in small cup and let sit for 5 minutes to thicken(this is your egg replacer)
  3. Mix together in bowl freshly ground almonds or almond meal, water, ground flax seed, coconut oil, vanilla extract, cane sugar, sea salt, and mini semisweet chocolate chips
  4. Scoop spoonfuls of dough into your hand and form in balls, then flatten into discs
  5. Place an inch or two apart, as they will not spread that much
  6. Bake for 12-16 minutes until edges are golden
  7. Let cool completely on sheet tray, when they are cooled, they are less delicate
