Orange Chocolate Cupcake with Orange Honey Glaze | | |

- 1/3 cup local meadowfoam honey
- 1 1/2 cups all purpose flour
- 3/4 tsp baking soda
- 1/2 tsp sea salt
- 1/2 heaping cup dark chocolate chips
- 1 Tbsp unsweetened cocoa powder
- 1 cup fresh squeezed orange juice, heated
- 8 tbsp (1 stick) organic unsalted butter, melted
- 2 large cage free eggs
- 1 1/2 tsp vanilla extract
- 1/2 cup plain yogurt
- ORANGE GLAZE
- 1 Tbsp local meadowfoam honey
- 1 Tbsp orange marmalade
- fresh squeezed orange juice to thin a bit
- Preheat to 350 degrees F.
- Line a muffin tin with paper cupcake liners
- Whisk the flour, cocoa powder, baking soda and salt together in a mixing bowl
- Put the dark chocolate chips in a large mixing bowl
- Heat orange juice
- Pour the orange juice over chocolate chips
- Whisk until smooth
- Whisk in the butter
- Whisk in eggs
- Whisk in the vanilla
- Whisk in plain yogurt
- Whisk in the flour and sugar mixture until smooth
- Divide the batter equally among the 12 cupcake liners in the pan
- Bake the cupcakes for 20-25 minutes, or until they are cracked on top and toothpick clean
- Cool in the pan for 5 minutes
- Remove lined cupcakes to cooling rack, with a sheet tray under it
- Liberally apply glaze with pastry brush
