- 7 medium peaches, pitted and rough cut with skins on
- 2 tsp cinnamon
- 1/2 cup packed almond flour
- 1 1/2 cup rolled oats
- pinch kosher salt
- 4 Tbsp cold unsalted butter, cut in pieces, plus 1 Tbsp cut in 5 pieces for dotting on top of crisp
- 2 Tbsp molasses (I used Blackstrap because that is what I have in my pantry)
- 1/2 Tbsp vanilla extract
- Preheat oven to 350 degrees F.
- Cut up peaches, and place in pan, they should be piled high
- Place all dry ingredients into food processor and pulse 7 times
- Place 4 Tbsp butter in and pulse until incorporated
- Scrape down sides
- Place molasses and vanilla extract into food processor and pulse until incorporated
- Scrape down sides
- Pulse 2-4 more times
- Carefully scoop mixture out of food processor over peaches into pan, and pat down a bit
- Bake for 30-40 minutes
- Cover loosely with foil and bake another 20-25 minutes
- Serve warm and enjoy alone, or with a scoop of your favorite ice cream
