Peach Crisp

Ingredients
  • 7 medium peaches, pitted and rough cut with skins on
  • 2 tsp cinnamon
  • 1/2 cup packed almond flour
  • 1 1/2 cup rolled oats
  • pinch kosher salt
  • 4 Tbsp cold unsalted butter, cut in pieces, plus 1 Tbsp cut in 5 pieces for dotting on top of crisp
  • 2 Tbsp molasses (I used Blackstrap because that is what I have in my pantry)
  • 1/2 Tbsp vanilla extract
Instructions
  1. Preheat oven to 350 degrees F.
  2. Cut up peaches, and place in pan, they should be piled high
  3. Place all dry ingredients into food processor and pulse 7 times
  4. Place 4 Tbsp butter in and pulse until incorporated
  5. Scrape down sides
  6. Place molasses and vanilla extract into food processor and pulse until incorporated
  7. Scrape down sides
  8. Pulse 2-4 more times
  9. Carefully scoop mixture out of food processor over peaches into pan, and pat down a bit
  10. Bake for 30-40 minutes
  11. Cover loosely with foil and bake another 20-25 minutes
  12. Serve warm and enjoy alone, or with a scoop of your favorite ice cream
