Spicy Refrigerator Bread and Butter Pickles

Ingredients
  • 2 pounds sliced pickling cucumbers
  • 1 1/2 cup apple cider vinegar(I used Bragg)
  • 1 3/4 cup white vinegar
  • 2 medium onions, sliced thin
  • 1 cup sugar(I used beet sugar, and have used cane sugar in the past)
  • 1 1/2 Tbsp kosher salt
  • 1 tsp celery seed
  • 2 tsp dry mustard
  • 1 1/2 tsp mustard seed
  • 1 tsp crushed red pepper flakes(add more if you like super spicy)
Instructions
  1. Rinse cucumbers in cold water
  2. Slice ends off cucumbers, and slice the rest into 1/4 inch slices
  3. Use stockpot and add to it cucumbers, onion, vinegars, sugar, salt, mustard seeds, dry mustard, crushed red pepper, and celery seed
  4. Heat to boiling over high heat, stirring frequently
  5. Boil for exactly 1 minute
  6. Take off heat
  7. Pour into bowl, sitting on top of ice filled bowl, and stir until cooled
  8. Ladle pickles into two clean quart sized, wide mouth mason jars
  9. Pour vinegar mix over pickles and screw on lids.
  10. Place in refrigerator up to 4 hours, or overnight
  11. Enjoy for 3-4 weeks(mine never last that long)
