Spicy Refrigerator Bread and Butter Pickles | | |

- 2 pounds sliced pickling cucumbers
- 1 1/2 cup apple cider vinegar(I used Bragg)
- 1 3/4 cup white vinegar
- 2 medium onions, sliced thin
- 1 cup sugar(I used beet sugar, and have used cane sugar in the past)
- 1 1/2 Tbsp kosher salt
- 1 tsp celery seed
- 2 tsp dry mustard
- 1 1/2 tsp mustard seed
- 1 tsp crushed red pepper flakes(add more if you like super spicy)
- Rinse cucumbers in cold water
- Slice ends off cucumbers, and slice the rest into 1/4 inch slices
- Use stockpot and add to it cucumbers, onion, vinegars, sugar, salt, mustard seeds, dry mustard, crushed red pepper, and celery seed
- Heat to boiling over high heat, stirring frequently
- Boil for exactly 1 minute
- Take off heat
- Pour into bowl, sitting on top of ice filled bowl, and stir until cooled
- Ladle pickles into two clean quart sized, wide mouth mason jars
- Pour vinegar mix over pickles and screw on lids.
- Place in refrigerator up to 4 hours, or overnight
- Enjoy for 3-4 weeks(mine never last that long)
