- 1 cup grated crisp, tart apple, skin on if you know your source
- 1/4 cup fresh squeezed orange juice
- 2 small bananas, mashed
- 1 1/2 tsp vanilla extract
- 1/4 cup melted, cooled coconut oil, plus 1 tsp more for greasing loaf pan
- 2 eggs, beaten
- 1 heaping tsp cinnamon
- 3/4 cup sugar(I used beet sugar)
- 1 cup unbleached all purpose flour
- 1/4 cup whole wheat flour
- 1 1/2 tsp kosher salt
- 1 tsp baking soda
- Preheat oven to 350 degrees F.
- Grease loaf pan with coconut oil
- Mix first 2 wet ingredients in bowl, to prevent apple from turning brown
- Add the remaining wet ingredients to bowl, and mix well
- Whisk all dry ingredient in separate bowl
- Add dry to wet ingredients, and mix until just combined
- Pour thick batter into prepared loaf pan
- Bake for 35 minutes, or until toothpick done
- Let cool for 5-7 minutes in pan
- Use a knife to gently work bread loose
- Turn out onto cooling rack
- This bread is wonderful eaten as is, or enjoy toasted with butter and your favorite jam
