Fresh Apple Banana Bread

Ingredients
  • 1 cup grated crisp, tart apple, skin on if you know your source
  • 1/4 cup fresh squeezed orange juice
  • 2 small bananas, mashed
  • 1 1/2 tsp vanilla extract
  • 1/4 cup melted, cooled coconut oil, plus 1 tsp more for greasing loaf pan
  • 2 eggs, beaten
  • 1 heaping tsp cinnamon
  • 3/4 cup sugar(I used beet sugar)
  • 1 cup unbleached all purpose flour
  • 1/4 cup whole wheat flour
  • 1 1/2 tsp kosher salt
  • 1 tsp baking soda
Instructions
  1. Preheat oven to 350 degrees F.
  2. Grease loaf pan with coconut oil
  3. Mix first 2 wet ingredients in bowl, to prevent apple from turning brown
  4. Add the remaining wet ingredients to bowl, and mix well
  5. Whisk all dry ingredient in separate bowl
  6. Add dry to wet ingredients, and mix until just combined
  7. Pour thick batter into prepared loaf pan
  8. Bake for 35 minutes, or until toothpick done
  9. Let cool for 5-7 minutes in pan
  10. Use a knife to gently work bread loose
  11. Turn out onto cooling rack
  12. This bread is wonderful eaten as is, or enjoy toasted with butter and your favorite jam
