Blueberry Cobbler Cookies | | |

- 1/2 cup butter, softened
- 1 cup packed brown sugar
- 1/2 tsp blackstrap molasses
- 1 large egg
- 11/2 teaspoon vanilla extract
- 1 1/8 cups rolled oats, crushed in bag with rolling pin
- 3/4 cup unbleached all-purpose flour
- 1/4 cup whole wheat flour
- 1 teaspoon ground cinnamon
- 1 teaspoon kosher salt
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 bar dark chocolate, chopped(see link above), or handful of dark chocolate chips chopped
- 1 heaping cup fresh blueberries(you can use frozen blueberries, but toss with 1 Tbsp flour before adding to batter)
- Preheat oven to 350 degrees F.
- Cream butter and brown sugar in a large mixing bowl
- Blend in egg, molasses and vanilla
- Combine oats, flour, cinnamon, salt, baking soda and baking powder
- Add dry to wet mixture
- Gently stir in the blueberries and chopped chocolate
- Drop by 1/8 cup, 2 inches apart onto parchment or Silpat lined half sheet pan
- Bake in preheated oven for 12-14 minutes or until golden brown(I under bake a little, for more of a soft cookie
- Let sit on sheet pan for 2 minutes and then remove to cooling racks
