Banana Bread with Molasses and Orange Zest

Serves: 1 loaf
  • 3 ripe bananas, mashed
  • 2 eggs, beaten
  • 1/8 cup honey
  • Zest from 1/2 orange
  • 2 Tbsp blackstrap molasses
  • 1 1/2 cup unbleached all purpose flour
  • 1/2 cup whole wheat flour
  • 2 tsp kosher salt
  • 1 tsp baking soda
  • 1 1/2 tsp coconut oil for greasing loaf pan
  1. Preheat oven to 350 degrees F.
  2. Grease loaf pan with coconut oil
  3. Mix bananas, eggs, honey, molasses and orange zest in large bowl
  4. Whisk together flour, salt, and baking soda in medium bowl
  5. Add dry mixture to wet mixture and stir until just combined
  6. Do not over mix batter
  7. Pour batter into loaf pan
  8. Bake in preheated over for 60 minutes, or until wooden skewer comes out clean
  9. Let cool in pan for 7 minutes
  10. Remove from pan(use knife along sides to help if needed)
  11. Place loaf on cooling rack
  12. Serve warm, cool or toasted with nut butter, cream cheese, butter, or your favorite jam
