Banana Bread with Molasses and Orange Zest | | |

Serves: 1 loaf
- 3 ripe bananas, mashed
- 2 eggs, beaten
- 1/8 cup honey
- Zest from 1/2 orange
- 2 Tbsp blackstrap molasses
- 1 1/2 cup unbleached all purpose flour
- 1/2 cup whole wheat flour
- 2 tsp kosher salt
- 1 tsp baking soda
- 1 1/2 tsp coconut oil for greasing loaf pan
- Preheat oven to 350 degrees F.
- Grease loaf pan with coconut oil
- Mix bananas, eggs, honey, molasses and orange zest in large bowl
- Whisk together flour, salt, and baking soda in medium bowl
- Add dry mixture to wet mixture and stir until just combined
- Do not over mix batter
- Pour batter into loaf pan
- Bake in preheated over for 60 minutes, or until wooden skewer comes out clean
- Let cool in pan for 7 minutes
- Remove from pan(use knife along sides to help if needed)
- Place loaf on cooling rack
- Serve warm, cool or toasted with nut butter, cream cheese, butter, or your favorite jam
