Cherry Tomato Pasta with Arugula and Flank Steak

Ingredients
  • 1 pound pasta
  • 2 cups of cherry tomatoes, smashed
  • 1/4 red pepper, chopped
  • large handful of sliced flank steak
  • healthy drizzle of balsamic vinegar
  • healthy drizzle of extra virgin olive oil
  • 1/2 small onion sliced thin
  • 2 handfuls of arugula or fresh basil gently torn
  • tsp kosher salt
  • 3 grinds of black pepper
Instructions
  1. Cook favorite pasta according to package (I like to use spaghetti)
  2. Smash and tear any kind of cherry tomatoes, over large bowl
  3. Add onion and red pepper
  4. Add arugula and/or basil to bowl
  5. Drizzle balsamic vinegar
  6. Drizzle extra virgin olive oil
  7. Add salt and pepper to bowl
  8. Stir to combine
  9. Drain cooked pasta and add to bowl. Use fingers or tongs to toss ingredients to combine.
  10. Serve to loved ones, and expect hugs and kisses after
  11. Possible additions: sliced or shredded chicken, sliced pork..
