Cherry Tomato Pasta with Arugula and Flank Steak | | |

- 1 pound pasta
- 2 cups of cherry tomatoes, smashed
- 1/4 red pepper, chopped
- large handful of sliced flank steak
- healthy drizzle of balsamic vinegar
- healthy drizzle of extra virgin olive oil
- 1/2 small onion sliced thin
- 2 handfuls of arugula or fresh basil gently torn
- tsp kosher salt
- 3 grinds of black pepper
- Cook favorite pasta according to package (I like to use spaghetti)
- Smash and tear any kind of cherry tomatoes, over large bowl
- Add onion and red pepper
- Add arugula and/or basil to bowl
- Drizzle balsamic vinegar
- Drizzle extra virgin olive oil
- Add salt and pepper to bowl
- Stir to combine
- Drain cooked pasta and add to bowl. Use fingers or tongs to toss ingredients to combine.
- Serve to loved ones, and expect hugs and kisses after
- Possible additions: sliced or shredded chicken, sliced pork..
